Simple Spring Salad

Keeping it simple when it comes to menu planning and preparing meals is important to me. I start with what I have growing in my garden, preserved in my pantry or freezer, and what I’m able to source locally. I harvest Aronia Berries in the autumn from the stunning bush that grows outside my dining room window. Blueberries or currents would work well, too. I place the berries in a glass jar and pour raw apple cider vinegar over them until they are completely covered. Then I put them in my dark, cool pantry for at least 2 weeks. When I drain off the vinegar, it has transformed into a beautiful, bright Aronia Berry Vinegar I can use in my Simple Salads all year long.

Mixed greens from Gathering Together Farms, available in bulk year round, or greens from your own garden

Sliced radishes
Shredded beets
Shredded carrots
Aronia Berry Vinegar
Extra Virgin Olive Oil
Salt and pepper to taste

Combine, toss, enjoy!
